MEAL #1: SWEET & SOUR PORK, RICE & ASPARAGUS
SWEET & SOUR PORK
1.5 pounds boneless pork loin, cut in 1" cubes
1 Tablespoon olive oil
salt, pepper & paprika to taste
20-oz. can pineapple chunks
1/2 cup barbecue sauce
1/4 cup vinegar
1 Tablespoon cornstarch
1 green pepper
Brown pork in oil; season with salt, pepper & paprika.
Drain pineapple, reserving 1/2 c. juice.
Mix pineapple juice with barbecue sauce, vinegar & cornstarch.
Add to meat; cover and simmer 45 minutes.
Add pineapple and pepper; simmer an additional 10 minutes.
Serve with rice.

MEAL #2: SHRIMP WITH COCKTAIL SAUCE, BAKED POTATO & FRUIT SALAD
SHRIMP
2 quarts water
1 Tablespoon Old Bay seasoning
1 pound fresh or frozen shrimp
Bring water and seasoning to a boil; add shrimp.
Cook 3-5 minutes or until shrimp is pink.
Drain and serve with cocktail sauce.
COCKTAIL SAUCE
1 teaspoon horseradish
1 cup ketchup
1 Tablespoon Worcestershire sauce
Mix all ingredients well.
FRUIT SALAD
20-oz. can pineapple chunks or tidbits
1 banana, sliced
1 apple, cored & chopped
1/2 c. seedless grapes, cut in half
Drain pineapple, reserving all juice.
Toss banana & apple in juice.
Add chunks (or tidbits) and grapes.

MEAL #3 LAST MINUTE SOUP
1 quart water
1 onion, chopped
1 celery stalk, chopped
1 carrot, sliced
2 cups chicken
1-15 oz. can corn
1-15 oz. can peas
1-15 oz. can diced tomatoes
1/2 c. instant or long-grain rice
1 teaspoon salt
Bring water, onion, celery and carrot to a boil.
Add remaining ingredients.
Lower heat and simmer 20 minutes.

DESSERT
This healthy dessert is simply a sugar-free brownie mix with applesauce substituted for oil.
