    Sweet Potato Nests Ingredients: 1 medium sweet potato, peeled 2 TBS olive oil pinch salt   Directions: Preheat oven to 400 degrees Shred sweet potato using a food processor (or hand grater) toss with olive oil and salt Spray cookie sheet with olive oil spray Divide shredded sweet potato into 6 “nests” and lightly press to tighten up the nest Roast in oven for 10 – 15 minutes, carefully flip the nests using a spatula and roast another 10 minutes or until tender in the middle and slightly crisp on the edges
