Roanoke Rescue Mission receives bountiful eggplant donation

In the movie "Forrest Gump," Tom Hank's character befriends a Gulf Coast shrimper during boot camp, who goes on for hours about the different ways to eat shrimp.

For the sequel, the Roanoke Rescue Mission may suggest recipes for eggplant.

The mission received a donation of nearly 2,500 pounds of eggplant from Craig Creek Gardens in New Castle on Tuesday.

Pictures from the donation taken by Craig Creek Gardens show quite the bountiful harvest.

The Roanoke Rescue Mission is the largest homeless shelter in Western Virginia.
