My husband’s favorite dish: My Meatloaf

My friends know I love to cook. When they ask my husband what his favorite meal is that I cook—to my chagrin—he quickly responds, “Meatloaf.“

Not that there is anything wrong with meatloaf but when he says “meatloaf” it implies—to me—my mothers meatloaf (no offense, mom.) You know, that meal you didn’t always like to eat as a kid, a hunk of ground beef with few onions and peppers, drowned in ketchup. 

He never goes on to explain that my meatloaf is a little different. To borrow a phrase from Emeril, it’s kicked up a notch! It’s delicious, it’s super easy to make and it freezes well. Last night I prepared two loaves… one to bake for tonight’s dinner and a second to freeze. Meatloaf is one of those things you may as well make two if you’re making one. I just put it in one big bowl and split the mixture between two pans.

I found the recipe in Shape Magazine years ago and decided to try it. I make it all the time. Its made with ground turkey and a lot of other great ingredients: spinach, fresh parsley, oregano, Italian bread crumbs onions and best of all… it’s stuffed with mozzarella cheese.

If my husband would answer, when asked, “ I love her mozzarella stuffed turkey meatloaf,“ I’d be happy. That, at least does it a little more justice. I’ll try to remember to take a picture tonight.
